Every recipe I've made is a keeper

The dressing for the Shredded Duck Salad, Stir-fried Chicken with Green Peppers and Chilies, Sauteed Lamb with Spring Onions, Fried Rice with Ham, and Ginger Beef are some of my favorites!

This is very similiar to "The Cooking of China" by Emily Hahn. It does contain more recipes, and is organized by ethnic region, which I found very helpful. It is valuable for its notations on how to serve proper Chinese meals, and is complete with sample menus.
