This very readable book is an excellent introduction to Spanish cooking and regional recipes. Almost all the ingredients are readily available in American markets (I admit partridge can be a bit hard to find, but chicken can be found everywhere). Unfortunately, the correct author, Barbara Norman, is not credited. It is incorrectly attributed to Claudia Roden who has also written many books on Mediterranean cooking.
