Jerusalem artichokes, or sun chokes, are tasty tubers that act in much the same way to potatoes when cooked. They start from a plant that seems to be a sunflower, and are not artichokes or from Jerusalem, so how the name Jerusalem artichoke came about is discussed. No doubt it was a misconception over the Italian word for sunflower, girasole. Regardless of the name, Jerusalem artichokes are delectable - nutty, crunchy when crude and very nutritious.
