1. In a large bowl, combine the lettuce, red onion, red pepper, cherry tomatoes, feta cheese, olive oil, red wine vinegar, Dijon mustard, salt, and black pepper. 2. Toss to coat. 3. Serve chilled or at room temperature.This recipe is perfect for a light and healthy summer salad. In a separate bowl, whisk together the canola oil and cucumbers. Pour the cucumber mixture into the salad bowl and toss to combine. 4. Add the cherry tomatoes and arugula and toss to combine. 5. Divide the salad among four plates and top with the feta cheese.
