Evolution of microbiological and organoleptic quality: of the "Gourmet" pre-prepared convenience food salad (lamb's lettuce, endive and radicchio) in the domestic refrigerator
Fresh-cut products are vegetables processed fresh from fruit and vegetables that have undergone one or more gentle treatments in their preparation, in which the vegetables remain alive after being processed. Considering the current trends in food, the consumption of these products is becoming more and more frequent and yet there are few works that study their evolution from the moment they are acquired in the supermarkets until they are finally consumed. The present work evaluates the microbiological and organoleptic quality of pre-prepared salads during storage in domestic refrigerators and different quality attributes related to consumer acceptance of "Gourmet" pre-prepared salads to determine the most important aspects for the consumer when consuming them or at the time of purchase. For this study, the "Gourmet" pre-prepared range salad was selected because it combines different flavours, colours and textures and is one of the most popular among consumers.
