An E-number may look like nothing more than a code on a packet, but behind it can be an enzyme, mineral salt, sweetener, glazing agent, stabiliser, thickener, humectant, flavour enhancer, modified starch, cellulose derivative or another specialised substance with a specific purpose in food.
