I checked it out from the library first

I checked this book out from my local library and then decided it was worth the purchase. Sometimes I feel like vegetarian cookbooks are trying to just make all the standard American dishes with vegetarian substitutes. I like that this book introduces you to recipes that are naturally vegetarian. People have been eating many of these dishes for a long time, they are part of their heritage. They've been around because they're worth keeping around.
