Travis J. Henry became a vegetarian in 1992.
When he subsequently began to study all aspects of diet and nutrition, he was
even more convinced that becoming a vegetarian had been the right decision.
Several major studies have proven that serum cholesterol and even mortality
rates of vegetarians are lower than the average omnivore. It was Travis's
experimentation in creating delicious vegetarian dishes that led to co-writing
a cookbook with his mother, Carla L. Henry, the co-author of Souper
Skinny Soups, also by Pelican. The result is Vegetarians in the
Fast Lane, almost 200 delicious recipes designed for preparation in 30
minutes or less.
Eating nutritionally in an active life-style can be difficult, whether one
is a vegetarian, semi-vegetarian, or just health minded. This cookbook is a
guide to having a heathier life-style in general, without having to invest an
unnecessary amount of time. It is also an excellent source of recipes for
people with health issues such as coronary heart disease, stroke, cancer,
obesity, etc.
Vegetarians in the Fast Lane also contains helpful information
on food storage and nutrient values to allow the reader to save time, store,
and get the most flavor and nutrients from each dish. Sections include
"What Is a Vegetarian?," "Time Management Applied to Food
Preparation," "Food Storing Tips," and "Vegetarian
Recipes."
The recipes cover vegetarian staples, breakfast, lunch, dinner, soups and
salads, and snacks and desserts. Even meat eaters will want to enjoy the
tantalizing recipes from around the world that can be quickly and easily
prepared.
