Add mustard seeds and let them splutter.
Add curry leaves, chopped green chilies, and peanuts. Saut for a minute.
Add chopped onions and saut until they turn translucent.
Add the diced potatoes and turmeric powder. Mix well and cook until the potatoes are tender.
Add the drained poha to the pan and mix gently, ensuring that the poha is evenly coated with the turmeric mixture.
Season with salt according to taste. Be careful not to make it too salty.
Cover the pan and let the poha cook for a few minutes on low heat. This allows the flavors to blend.
Once the poha is heated through, remove from heat and drizzle some lemon juice over it.
Garnish with freshly chopped coriander leaves.
Serve hot as a breakfast dish or snack.
