Horseradish, scientifically known as Armoracia rusticana, is a perennial plant that grows in clumps and is used as both a vegetable and a herb. It is mostly cultivated for the pungent, yellow-white roots that have a distinctive flavor and may be used to season a wide variety of foods. The plant has long, shiny, serrated, dark green leaves, and in the summer it bears teeny flowers with four white petals that are arranged in panicles. The leaves are polished. Planting horseradish typically takes place in the spring, and the crop will swiftly mature to the point where the roots may be harvested in the autumn. Take note that the roots of horseradish are technically poisonous to both people and animals.
