This book is a culmination of recipes that my family and I have completed ever since my father, sister (who just made herself a part of my family. She was on dialysis for 5 years, got a kidney transplant and died three years later from pancreatic cancer) and then my sister developed kidney disease and had to be on dialysis. We have discovered that we can tailor recipes so that the whole family can enjoy them and not feel as if they are eating something strange or make either of them feel left out. My father passed in 2002 and my sister developed kidney disease in 2011. The recipes we started changing for my father were still used and we have changed more to fit my sister now. The Nutrition facts were taken from the Food Analyzer on the DaVita Dialysis Center website. Most of the recipes were things that my mother, grandmother and aunt passed down to us and were changed to fit the diet restrictions of our dialysis family members. Everyone enjoys them and they help the dialysis family members feel included. Here's to hoping that your family will use these especially if you have a dialysis patient that you are trying to feed.
