The monograph presents trends and prospects for the global vegetable oil market, analyses the general characteristics of sunflower oil production methods and developments aimed at improving them. Experimental studies were conducted and patterns were established describing the dependence of sunflower oil yield and its acid number on factors influencing the process of heat treatment of sunflower seed meal before pressing.
