In the first few pages of the book, you will find a quick explanation for the inclusion, or exclusion, of certain foods or ingredients that tend to cause some confusion for those that are new to a low oxalate diet. Each low oxalate recipe contains an estimated oxalate content for each serving of the meal for your convenience, with many of them below 10mg or even 5mg! This low oxalate recipe book was created in order to help people struggling with finding recipes that are actually low in dietary oxalate. I decided to connect with a variety of chefs, nutritionists, and others who are the opposite of me, and just enjoy being in the kitchen and/or creating recipes. This book is a compilation of recipes created by this group of people, specifically for a low oxalate diet. It is organized by contributor, with each of their recipes following a quick introduction about them and their work. This is a very interesting group of people from all different backgrounds, countries and experiences, so make sure to read through their bios and connect with them if you have any questions or want to see what else they are up to!
