This is a great cookbook. The recipes are easy to follow and produce delicious results. I especially like the Veganized Baked Pasta, Summer's Secret Spaghetti, Gorgeous Garlic Toast, I Remember Those Biscuits, and soup recipes. You'll get a lot of use out of this book!

I am most definitely not vegan, but the food in here is just too delicious not to eat! In fact, I think that 99% of the non-vegans out there wouldn't have any idea that these dishes were vegan in a blind taste test. They would just say "more please!"

What I like about this book is the fact that it not only introduced me to new tastes and ingredients such as Tofu Piri Piri or the wonders of quinoa, but it also gave me dozens of new ways to put together standard ingredients that I already tend to keep on hand. The recipes range from homey, family fare like Lemon-Garlic Pasta and Gorgeous Garlic Bread to the more elegant Israeli Couscous Salad with Carrot Vinaigrette. Ms. Keightley's forte is putting a new twist on familiar foods. Anyone who can make a chocolate-filled coffee cake seem wholesome and nutricious is A-Ok in my book. I recommend this cookbook to anyone who is looking for new answers to that ages old question, "What's for dinner?"

If you're not vegan, don't let the fact that this is a vegan cookbook scare you. There are a lot of recipes in here that are vegetarian and just also happen to be vegan. You won't regret buying this cookbook because there are so many great tasting, fabulous recipes and it might even inspire you with some new ideas for creating your own dishes. I know it has for me! For those of you who are not vegan, you can use eggs, or butter, or margarine, or chicken broth, etc., if you don't want to use the vegan ingredients in the recipes (sorry to all you vegans out there). If you want to be adventurous however, go ahead and make the recipes as written, I know you will be pleasantly surprised. Every recipe in this cookbook has been thoroughly tested by Summer and I have not been disappointed in a single one. I would highly recommend the Cheezish Macaroni! Even my non-vegan carnivorous husband loves it, and that's saying a lot! He said that if he didn't know better, he wouldn't be able to tell that it wasn't regular macaroni and cheese. It is the best non-dairy cheese I have EVER tasted. Some of my other favorite recipes are Lemon Garlic Pasta, Veganized Baked Pasta, Roasted Root Veggies, and My Favorite Lentil Soup. I have made all of these for hard core meat eaters and every time they have been a hit. Glad cooking to you!

The recipes are all very simple and I've had success with every single one that I've made. Whether you're a long time vegan, new vegan or someone that just wants to cook vegan, it's a must have book to have in your cookbook collection.
