I never worked behind the bar, so I approached it with a bit of apprehension when developing my own establishment. Bar & Beverage Operation was a lifesaver. I would have been purchasing any old blender, instead of the industrial strength stainless steel version. The book also taught me the importance of rotating glassware. I never considered the repercussions of worn glassware breaking in a customer's hand.
