Agree- A Great Classic

This gem of a book, along with Cuisine of The Sun, is rarely talked about, let alone used, anymore and that is too bad because both are truly great & inspired cookbooks. Cuisine of the Rose has a beef bourguignonne that raises the standard of that dish. Yes, even rivals Julia's. I have been using both books for well over 15 years and so was thrilled to see recent positive reviews. The recipes work and the writer is grounded in good cooking principles. There is nothing trendy or "hot" about her or the book. But if you want solid classic French cooking thoughtfully presented, if not inspired, then get these books. You will love the results. I always feel happy about cooking when I open one of these books.

Everything is good

One of those rare cook books where everything works, everything is delicious and the recipes are truly worthwhile. I have only two such cook books which stand out from all the others. In the general crowd of cookery books only one or two recipes work and they are really just celebrity products from Lawson, Carlucci, Day Lewis. However, this book particular book has no celebrity about it except the food! The veal in wine and onions page is completely covered with the fatty speckles which only adorn the most satisfying recipes after repeated use. The food is completely classical and correct and if you like unusual or creative food, don't bother with this. If you want to know my other favourite book, you'll have to ask in a review below!
