Only have about 30 minutes to prepare a meal? Try this!

The book begins by noting the premise that our lives are hectic and that we have limited time to carry out many activities--including cooking. How to have good, healthy meals with time pressures? This book provides one answer--quick recipes, taking 30 minutes or less to prepare good, healthy meals. Does it succeed? Let's look at a handful of recipes to illustrate. "Tomato and mozzarella toasts." This is a tasty appetizer--and easy to create! 3-5 minutes to prepare and about 7-8 minutes to actually make. Ingredients: three thin ciabattas, sun-dried tomato paste, mozzarella, dried oregano (or mixed herbs), olive oil, and ground black pepper. Broil the bread until lightly toasted, then apply the ingredients, put on a baking dish and bake until the mozzarella bubbles. "Corned beef hash." When I was a kid, my mother used to buy those cans of corned beef hash, heat the hash up, and serve with a side of eggs. I recall enjoying it a lot. But making the hash fresh produces something a whole lot tastier! Ingredients: sunflower oil, butter, onion, green bell pepper, diced potatoes, corned beef, nutmeg, paprika, eggs, black pepper, parsley, and (if one wants) sweet chili sauce or tomato sauce. It takes about 4-5 minutes to prepare and some 12-15 minutes to cook. Tasty. The photo on Page 112 nicely illustrates how this would look served. "Seafood pilaf." 3-4 minutes to prepare and 17 or 18 minutes to cook. Ingredients: olive oil, long grain rice, turmeric, red bell pepper, onion, zucchini, button mushrooms, fish (or chicken) stock, orange juice, white fish fillets, shelled mussels (which I would omit when I fix this), ground black pepper, and orange zest. Some other dishes that I look forward to making in the future: pasta with broccoli and artichokes (a nice vegetarian dish), Cajun-spiced chicken, spaghetti with seafood sauce, pan fried Mediterranean lamb, tuna steaks with pan fried plum tomatoes, crunchy topped cod, and eggs with spinach and cheese sauce. My answer to the question posed in the first paragraph? Yes, this book succeeds. One question that my brief experiences with these recipes raises: The actual process seems to me to take a little more time than the recipes allow for. But it's not a whole lot longer in any event--and the recipes produce tasty dishes.

Are you busy and don't have time to cook good food? Then buy this book.

This is a truly 30 minute cookbook with wonderful recipes and colored photographs that will guide you, step by step in your preparation. Most of the recipes in the book have cook's tip inserts which are really useful. Unlike most 30 minute cookbooks, this book not only covers vegetarian dishes and salads but has many fish, shellfish and chicken dishes, as well as recipes for soups and deserts. Furthermore, almost all the dishes could be prepared with readily available or everyday ingredients. This is truly a cookbook for today's busy professionals.

Must Have!

If you are a serious cook who likes tasty and well presented dishes this cookbook by Jenni Fleetwood is a "must have."Each recipe is on a page or half page and is presented with a photographic display of just what your finished product should look like. And, the photography is well done and distinctly helpful. Step by step guide to preparation is offered for each recipe. Unlike many "quick" cookbooks this one lists ingredients that are easily obtainable at your local grocers and yet are not "instant" type foods. This is truly a gourmet cookbook for the gormand cook. May be the most useful book in my cookbook arsenal and I have hundreds of them. Most I never use but this one will be used on a regular basis.

This book is the ULTIMATE!

My family and I share cooking responsibilities and time and time again we go to this cookbook for inspiration. We have tried probably half of the recipes and THEY HAVE ALL BEEN WINNERS!!! This book is excellent: the ingredient lists are short, the instructions are well-written and the photographs are BEAUTIFUL!!! With a well-stocked pantry of easy-to-find condiments and fresh food in the frig or freezer, you can find a recipe for tonight's dinner and make it in 30 minutes or less!!! NO KIDDING! We're ordering several more copies to give as gifts -- it'd be a great wedding gift or for the kids going off to college!
