You too can be a caribbean cook....with this book.

This is a great book about the "science" of caribbean cooking. Recipes were written, enhanced and tested by the former Prime Minister of Barbados and his long time friend and cooking partner, an asian dentist. What I love about this book is that it shares so many interesting techniques that will allow the cook to obtain the most flavor from each recipe. I would have rated the book 5 stars if it was not for the poor photography-- a rating of 4 1/2 stars was not an option.
