Pigeon Peas: From The Pigeon Pea Project

Whether called pigeon peas, gandules, toor dal, or gungo peas, the Cajanus cajan stands as one of the most important legumes in the world, serving many with healthful protein, necessary minerals, and enriching the soil with nitrogen all the while. Presenting the first Yard-to-Table Collection from Blue Kitchen Inc., "Pigeon Peas," is a curated group of recipes from around the world, aimed at encouraging food forests and permaculture principles as we build better soil and educate on growing your own plant-based protein.

The Pigeon Pea Project's volunteer growers will grow, harvest and donate a portion of peas back to the organization for mutual aid, food banks or educational opportunities to help address and educate on food security, growing the legume in smaller residential yards and cooking with the peas. The project is administered by Blue Kitchen Inc., an inclusive nonreligious, nonpolitical 501c3 nonprofit entity based in Winter Park, Florida, which hosts various other projects for good health. See www.bluekitchen.org for more information on current projects.
