ON BAKING

I purchased this book from HALF PRICE BOOKS OHIO as a required text in Galveston College's culinary class 'Baking Fundamentals". This book is far from fundamental and will train you to be very comfortable with all baking techniques. It is well written, well illustrated and one I plan to keep as a reference, The second edition is fairly costly but our Chef Instructor allowed us to use the 1st Edition if available .If you Buy from Half Price Books Ohio you will also be very happy.
