This vegetarian cookbook is written for my single mom friends and for all of my friends who have expressed a need to eat nutritiously, but don't have the time to plan, prep, and cook after a long day of work. It boasts 19 tried-and-true slow cooker double recipes. Double, you ask? What do you mean by double? Each of the first 19 recipes contain both "quicker" and "more nutritious" versions of the same recipe. The Chili Verde recipe, for example, includes a quicker version with 8 ingredients that you toss into the slow cooker, stir once, cover, and return hours later to a tasty dinner. It literally takes 5 minutes or less to prep. The more nutritious version takes about 45 minutes to prep and, instead of using canned or frozen ingredients, calls for fresh ingredients such as Poblano and jalape o chiles, onions, garlic, cilantro, and tomatillos. The quick versions can be prepped and placed into the slow cooker in 10 minutes or less. Turn on the slow cooker and forget about it The more nutritious versions take anywhere from 20 to 60 minutes to prepare and, because they use fresh ingredients, are more nutritious. Both recipe versions are tasty. Both will put a smile on your face.
