The author gives an insightful and humorous "behind the scenes" look into what goes on in the kitchens of many restaurants relying upon his many years of experience as a chef/cook in various establishments. A must read for any restaurant regular who wonders if they complained a little too loudly at their last visit or for those who wish to know what to look for to make sure they are getting what they ordered. It made me think twice about sending my steak back for further cooking!
