In my family, I've always been known as the 'Muffin Queen'. Out of necessity, I created muffins for breakfast, lunch, on the go snacks, sometimes dinner and a sweet yet healthyish treat for dessert. As a single mom of 4, during those maddening, insanely disjointed, hectic years from age 6 to 16, with school, hobbies, work and hormones, I needed a friend! Muffins became my antidote to madness, my friend. How? I needed a quick, healthy and affordable breakfast, lunch, to-go snack and a bribery sweet treat, and I needed the kids to be able to help make them. Fast forward to my very chic and exciting grandma life now, in which I am the CEO of a scrumptious Food Blog, 'Whisk and Dine, ' have become a public personality on several television cooking shows, and indulge in the healthy charms of a countryside home, my muffin repertoire has been elevated with a splash of whimsy and diversity, yet still easy enough for my grandchildren to make.
