I was born and raised in Marshall, N.C. Momma always made sure we had a good hearty meal. We didn't have a lot of money. Momma knew how to spread out a dollar. That value was passed on to me. I took the advice and skill that Momma taught me and grew with the knowledge. I grew mine and my families palate by experimenting with what ingredients I had on hand. A nice country supper doesn't have to be hard or expensive. Who wants to buy a bunch of ingredients for one meal? I keep it simple and use what ingredients that I have on hand. One thing about mountain cookin is that most recipes are made by eyeing the ingredients. A dash or splash is what we do. I have a hard time giving exact times or measurements.
