This book is not for beginners--it is an Industry book by Industry people. If you're aspiring to Rule your Kitchen, or to Rule a Kitchen and get Paid for it, it's a must have, right along side of Escoffier. This book, along with the rest of the Eurodelices series, is a must have for all aspiring Chefs out there, even those who have reached the top wouldn't harm them to get these books.
