I bought this hard to find book to replace one that I lost. Specifically, for the Paella recipe. We changed the recipe a little and substituted fat-free imitation crab meat and shrimp for the chicken! Other recipes are excellent for those looking for Low-Fat and low calorie recipes.
Amazingly, this is really good food.

Whenever I hear the words "low fat," I immediately think "yuck." So it's no wonder that I didn't originally buy this book--my grandmother gave it to me. Since that time my husband and I have tried about 15 recipes and every single one of them was incredible! I would especially recommend the Ginger Pork Stir Fry and the Salmon with Wilted Greens. As an appetizer, the Sweet Red Pepper Spread is unbeatable. Because I am not a very experienced cook, I like that most of the recipes are easy and quick to prepare. It is a good book for any cook--experienced or not--who wants to make great tasting, healthy meals for their family.
