As a first-generation Indian-American in the US, I am always on the lookout for good cookbooks that will bring back those childhood dishes. I have tried dozens of cookbooks, but I have found this one to be the most practical and the one most like what home cooks want -- authentic flavors within the ease of your kitchen, just using your stove, oven, and basic spices. I purchased this when visiting the UK and have made dozens of the recipes time and again. The spices need to be doubled sometimes, since I don't think our spices are quite as fresh or potent here, even if you get them at an Indian food store (and I don't like things too spicy). Overall, an excellent Indian go-to cookbook, and I am buying a copy for my sister-in-law.

I bought my first copy of this book after being taught some basic Indian cooking from an Indian friend back in 1992. I immediately found it useful and it opened up my mind to Indian cooking more as a concept than my friend had done. Its simple recipes are brilliant, producing great meals and as an introduction it has my best recommendations. It does not, however, introduce you to more complex aspects of indian cooking: Regional differences and their cultural heritage is barely mentioned and it was not from this book I learned to distinguish Mughal cuisine from, say, Gujarati. Still it is my all-time favorite cookling book that I am now online to purchase more copies of for a privately held basic course in Indian cooking.
