I was a sous chef to a French pastry chef. There is nothing wrong with this book as a whole but I just think it hasn't aged all that well. Published in 2002, it just seems dated and fussy. Food trends have moved on. We use fresher ingredients and tend to make simpler and more rustic desserts. I think it now will only interest folks who wish to make European style tortes, linzer cookies etc. A niche book, nothing more. Save your money, go to Instagram and follow your favorite baker.
