If I had to have only one cookbook (perish the thought!), it would be this one. I LOVE soup, and James McNair's recipes are absolutely wonderful and work every time. Don't be fooled by the sumptuous photos of these soups into thinking you have to have a degree from a culinary institute to pull them off.
