Given that Colombia is renowned for producing excellent coffee, there is a need to capitalize on this situation and delve into the context of the Colombian coffee industry in order to innovatively create various products aimed at coffee consumers. However, organizations must face new market challenges, where they can advance accordingly, because if they do not implement innovation processes, they may run the risk of losing competitiveness within the business sector. In view of this, this research will be carried out in collaboration with various experts in the field, starting with an understanding of the demands of the coffee market, which is changing and increasingly demanding. Based on this, organizations such as ASOMIPRAM need to meet these obligations.
