I wanted to write this book to introduce people to the way Greeks have eaten for millennia. I did not write this book for vegetarians but if you are a vegetarian, traditional Greek food would suit you, and travelling around Greece is easy if you don't want to eat meat.I'm sharing recipes that I grew up with. This is the food that Greeks eat at home and it will soon be clear why the Greek food culture is one of the healthiest in the world. I grew up with one of the world's great culinary cultures; a culture that is proud to include one of the five Blue Zones of the world; the island of Ikaria in the Aegean Sea. I have always wanted people to understand that Greek food eaten at home has very little meat. Greek children actually like vegetables because they are cooked in sauce with herbs, fresh tomato sauce, or egg lemon sauce - what the Greeks call avgol?mono. As you read through the recipes, you will understand this. Olive oil is the hero in these vegetable dishes. Eggs and cheese also play a major role, but never underestimate fresh herbs. Spices are mainly used with meat dishes. What you notice in these recipes is the very few ingredients needed to create a tasty family dish. This makes it cheaper and healthier to eat traditional Greek food. I'm not preaching vegetarianism; I'm just interested in introducing real Greek food to my non-Greek friends and hopefully some Greeks who have strayed.
