This book begins with an expression of its niche: "This book is designed to appeal to anyone who wants a wholesome but quick and easy diet, and includes many recipes suitable for vegetarians and vegans. Its main aim is to show people that, with a little forethought, it is possible to spend very little time in the kitchen while still enjoying appetizing food." One example (from the dinner that I prepared this evening, as a matter of fact): Chicken with orange sauce (page 162). The book claims that it provides good dishes with not a huge amount of work involved. This one dish is consistent with that sentiment. It took about 15 minutes or so to cut up one leek, one red bell pepper, and one zucchini, to prepare three oranges, to measure out the brandy, orange juice, ricotta cheese, and other ingredients. Once the cooking started, things proceeded quickly. And the end result was quite tasty! So this is not a fancy recipe, but it is a very effective one. I have gone through a number of recipes in this book (not yet having tried any others, I admit), and I see several that I want to try, such as: Bruschetta with tomatoes Capri salad Poached salmon with penne Spaghetti and seafood sauce Pork chops with sage Spaghetti with ricotta cheese sauce So, not a fancy cookbook, but a very interesting addition to my kitchen library!
