While I love to cook and have been an avid home chef for many years, Indian food was one style I had yet to try preparing myself until I purchased this book. The subtitle of the book is mostly correct: the recipes contained within are generally easy to prepare, and thorough step-by-step instructions are provided for each dish. The book is divided into logical sections: an Introduction to Indian cooking; Basic Recipes for preparing your own curry, garlic, and ginger pastes; Soups; Meat & Poultry; Fish; Vegetables; Bread, Beans & Grains; Snacks & Side Dishes; and lastly Desserts. Each recipe is illustrated with a final photo and several step-by-step photos as well. Most ingredients are ones you can find easily in any good supermarket, although there are some spices and types of grains you may have to seek out from a specialty store. I've had good success with the recipes I've attempted so far from this book, particularly enjoying the various vegetable curry preparations which make for nice, hearty meals when I want to forgo meat. One quibble is sometimes I feel the recipes are a bit heavy on the oil for my tastes, so I do tend to cut back on the listed amount for a dish. Not all recipes are quite as "easy" as the title might lead you to believe, either: many require a fairly long list of ingredients which need to be chopped and prepped, or pastes/spice blends you're supposed to have prepared in advance. That said, if you're looking for a solid collection of classic Indian recipes that you may have loved in restaurants and would like to try preparing at home, this cookbook is a solid bet.
