This book is indispensible for anyone who is trying to improve their diet in a health-conscious way. It is a fascinating read learning about the history and nutritional background of many different kinds of grains. I started milling my own wheat about a year ago, but had no idea of the nutritional value, or of the numerous other things that can be done with just the berries...cracking them, sprouting them, flaking them, cooking the berries for cereal, etc. This book also lets you know what some of the more obscure grains are, and how you can buy them, store them, and prepare them, as well. Also included, are some valuable reviews and information on different kinds of flour mills and bread kneaders/mixers.
