An absolutely fabulous book!!

I have already tried two of the recipes and I am trying another one tomorrow!! The fruit cake muffins were so satisfying!! These recipes are just wonderful!! The muffins are chock full of wonderfully healthy ingredients and yet you can't tell they have no sugar in them!! They are so satisfying! My biggest complaint is that the muffins don't last two days!! You can't stop eating them!! The recipes are easy and fail proof!! The natural ingredients make them so yummy!! I plan to make every recipe in the book!! I feel like a master muffin maker now!! Get the book!! It's fabulous!!

One of my kitchen essentials

I concur with the other reviewers, this is a great book. Her helpful hints (such as the necessity of sifting) truly do make a difference. One incredible "extra" is that it provides a base for your own experimentation. We substitute whole grain and unbleached spelt flours for the wheat and others (Eat Right 4 Your Type)and often use applesauce instead of the oil. We even use splenda if we want an extra bit of sweetness. She leaves plenty of space after her recipes so you can list comments and modifications. (Try substituting dried cranberries for the blueberries in blueberry blintz muffins. Super yum!) Our biggest complaint is that this book is so often used that we're going to have to use a rubber band to keep the pages together!And you might as well get used to making everything in double batches -- the muffins just seem to disappear. May this lady be remembered in heaven for an infinite number of years plus one!

So complete and concise, very descriptive of the equipment needed, and also of all the ingredients, very, very educational and helpful! Perfect for diabetics and people with other eating restrictions. I am so impressed, I just ordered two more copies, for friends with food restrictions. A fun read, and now comes the excitement of trying the many delicous-sounding recipes!

It was the first time for me to bake muffins. I used a recipe from some general cook book (I think it was "Better Home something"). Since it was my first time, I strictly followed the instruction. The result was aweful. It tasted like K-Mart's "buy a dozen at 99c and get another dozen free" muffins. My wife said something like "I could eat with help of coffee". Frustrated, I went to Border's Bookstore, and found this book. And I chose one recipe, called "California Style Muffin". Again, I strictly followed the instructions, and the result was: "I have never eaten more delicious and healthier muffins ! I just love my muffins !". Gloria's book starts with the explanations of the equipments, explanations of terminology and ingredients (for example, various kinds of flours). Then some general education of nutrition follows, where she explains why her recipe does not use sugar or salt (in her most of the recipes) and instead uses natural sweeteners (such as apple juice concentrate). Then she explains the general method for muffin specific baking. After that, recipes of many kinds of muffins follow. If you are health-conscious and want good quality muffins, I highly recommend this book. You need to take time to find/prepare appropriate ingredients. It's not hard. Did I say that it was just my 2nd time for muffins ? I used to buy "100% whole wheat muffins" from Randall's Grocery store in Houston. It tastes great and it contained all healthy ingredients except too much sugar. It was too sweet. I was very happy to find this book. And I am happy that I can now bake the muffins that I want (not so sweet, not salty, but good, healthy ingredients). Thanks, Gloria.
