I love this book. Its dog-eared corners and stained pages are a testament to how often this book is used. It has a wide variety of breads in it, including whole wheat, sourdoughs, sweet breads, quick breads, batter breads, steamed breads, fried breads, etc... I love the way this book is broken up into the months of the year, with recipe suggestions given that just seem appropriate for the season of the year you find them in. I highly recommend this book to anyone looking for a very diverse bread book, whose recipes never let you down.

This book is a practical introduction to bread baking. It begins with a short essay on the motivation for baking bread. This is followed by detailed instructions for baking one's first loaf from scratch. To insure a chewy rather than flat initial first experience, the first loaf contains only white flour, but most of the other recipes call for the addition of at least some whole grains. The introductory section includes tips for baking bread on a tight schedule or with continuous small (child) interruptions, and a comparison of kneaded breads, batter breads, quick breads, corn breads, steamed breads, fried breads, and sourdough breads. It also includes several methods for making your own sourdough starter. The remainder of the book consists of recipes organized by month, with each month featuring some special breads for holidays or ingredients of the season. Each month there are recipes for basic breads, like sprouted-wheat, quick breads, as well as treats like waffles or doughnuts. The book is illustrated with whimsical black-and-white photographs of bread making or eating, and there is an index. I have enjoyed the tremendous variety of recipes in this book, which go far beyond ordinary breads. I've enjoyed making sourdough English muffins following the recipe from this book, and learned to make some very decent whole wheat breads by following the tips in the introductory section. What makes this book stand out from other bread books is the inclusion of a number of traditional bread recipes from the American South, including several spoon breads, as well as several standard South Asian breads.

All the recipes are step by step instructions easy for beginning bakers too. Most of the ingredients are in everyones cupboards. Have prepared many from this good book and all have turned out wonderful and make me look like I know what I'm doing. Have only had this book a short time but it's one of my most used favorites. Even the grandkids enjoy baking now....
