Food fermentation is a hobby my grandfather started first, then my father got involved, and when I was about ten years old, I started getting fascinated by it. So it has been in our family for three generations. I am not a scientist, nor a guy with a Ph.D. in Chemistry. I love the food this process can produce and some of the true health benefits it offers. I have done quite a bit of research to find the chemistry part of fermentation out of curiosity and found out that what my family has been practicing for three generations now is actually safe and healthy.
