Quite a Cookbook Amos Lassen Having been raised in New Orleans and growing up on Creole (albeit kosher) cooking, I was quite anxious to have a look at "Da Cajn Critter". What a lot of fun this book is. Pamela Lyles shows us how to cook without stress and we learn how to have fun in the kitchen and produce good food. Ah, the memories the book holds for me and I was quite surprised to see the recipe for chopped chicken liver, one of my favorite dishes. The recipes are amazing and can be prepared quickly and the book is a collection of recipes that Lyles has collected for years and have been passed down from family member to family member. It is all about good food and easy preparation. As much as this is to read it also is a serious cookbook. Lyles explains everything wonderfully--be it cooking an egg or "makin' groceries". The book is full of tips and ideas that captures New Orleans, and the magic that it is

The author had a book signing at our school book fair and we had parents make a lot of the recipes. Everything was delicious and even some "non-cooks" had no trouble getting food together. The New Orleans fun side of the book keeps it interesting, too!

Pam Lyles has created not only a precious family heirloom with her amazing recipes. Pam has also created an entertaining guideline for those of us newbies in the kitchen. I love the details she shares about cooking the perfect egg, etc, simplifications of what we "should" know in the kitchen, but most of us don't. This book is like getting the perfect cooking lesson from your grandma or your mom, there are lots of basic cooking tips that I didn't know until spending some time reading Pam's book. It's updated, a fun read, and now I can retire my older cookbooks as a source of how-to when I am panicking over a recipe. Thank you so much for this new source of helping us all cook a little better, Southern style.

This is by far the best cook book I've ever owned. I love it! I love it! I love it! My wife and I cooked us some of da critter last night and it is still makin' me salivate just thinking about it. This is an easy cookbook to follow and the layout is wonderful. But the best thing, I have to say is that the recipes are marvelous. After all isn't that what a cookbook is supposed to be about. I suggest that everyone who plans to have a Mardi Gras party, better buy this book.
