This book as a resource for brushing up on culinary skills, methods, and terminology, is excellent. Although the title can be confused with a book of the same title, that is published by the American Culinary Federation, which is what happened to me when it was listed by the seller as Culinary Fundamentals. There must be a way of ending this confusion. I think that the information is the same as any other textbook on commercial cuisine, and is extremly educational, so much that maybe more culinary schools should consider it for their curriculum.
