This book was a big help when I made the transition from dorms and cafeterias to preparing my own meals in my own kitchen. It was the only one I could find that gave really, REALLY basic information. What does "braise" mean? How do you boil eggs? How do you cook plain rice that's not out of a "Minute Rice" box? Cooking Without Recipes gave me these answers and more, and helped me to develop the confidence to experiment. About the only complaint I have is that I can't always remember how I made my concoctions to repeat them in the future!
