The best Chinese cookbook in my library

I have been cooking from this book for over 20 years and have never gone wrong. While I am an experienced Chinese cook who often tweaks recipes, with this book it is almost never required. From appetizers (Diced Spicy Chicken in Lettuce Leaves) to entrees (Currie Beef Noodles), most of my family's favorites come from this esteemed book, one of 10+ Chinese cookbooks I have on my shelf.
