The authors and I were reared in the same community in Texas, they being junior to me by a few years. I was gifted a copy from their original 1983 printing and was much surprised to find recipes which ranged from international cuisine to such "down home" Texas fare as "biscuits and gravy," "chicken fried steak," "chicken fried chicken," and almost anything else that could be "chicken fried" - but in no way denigrating that style of cooking nor its flavorful results. Calf fries derive from the utilization, by a ranch's chuck wagon cook, of the protein yielded, during the roundup, by the transforming of young bull calves to young steers. Calf fries are a delicacy yet to be known to most non-Texans. My congratulations to the two authors for an exceptional cooking guide. I would not be surprised to find its being printed for re-issue.
