I am one of those individual who is fond of fish and seafood. I simply cannot get enough of it. We do not live near the coast, but we do live in an area where fresh wild fish is readily available, and we do have easily accessible markets, which are not as good as "right off the boat," but will certainly do in a pinch. Over the years we have lived near the sea quite a lot, and that was even better! I am also a big fan of Better Homes and Gardens Cook Books and my wife and I have been using them for almost 50 years now. This 1986 offering, dealing with the preparation of fresh fish is worth its weight in gold...well, maybe not that much, but it is worth a lot to people like me who delight in such fare. Like all Better Homes and Gardens books, it is well done, well organized and the dishes are presented in such a way that you would almost have to go out of your way to mess them up. Also, keep in mind that even though this work is over 20 years old, it is still valid and in many ways much better than some of the more current books we use. We are constantly referring back to this one. The book is broken down into sections or chapters which include Catching the Basics (which covers such things as buying, storing, cooking and nutrition tips). This is one of the more important chapters in the book as I have found that choosing the right fish, performing the correct preparation procedures and general handling either make or break the dish you are preparing. The chapters are then broken down into Main Dishes, Sauces (a delightful and informative chapter), Soups and Stews, Salads, Appetizers and is finished off by a Fish Selection Guide, which is another very important section of the book; your dish is the fish and if the fish is wrong in anyway, then your dish will be wrong. It notes, and it is true, that there is a difference in flavor and texture is each fish you prepare and this makes oh so much difference. Far too often in our country you get fish one of two way; either fried or baked. What a horrid pity! There are oh so many different and delightful ways of preparing and presenting this most healthy and delicious of foods. The ways of cooking freshwater and sea creatures is almost endless and this work gives you a great start. We have personally tried quite a number of the recopies given here; some of our favorites being Smoked Trout with Horseradish Sauce, Fish Stroganoff, Captain's Chowder, Curried Seafood Chowder, Bacon-Stuffed Flounder Rolls and the list goes on. As stated before, I do feel the section and chapters dealing with proper initial preparation are extremely important. There are plenty of photographs in this 96 page book and the text is perfectly done and quite easy to follow. Stop just frying the life and taste out of your fish and give some of the wonderful soups, salads, appetizers and stews a try...I promise you will not be sorry! Happy Eating!
