Love IT - Perfect Even Today

I bought this book several years ago when I first bought a microwave and it has been extremely helpful. Mainly, I cooked vegetables with these instructions. It really helped with corn on the cob and YES I did cook ACORN SQUASH p 111 for the first time with these instructions. It was excellent. I never had it growing up and I haven't cooked it again. I guess I am still scared of it because I wasn't used to it, but it was excellent with brown sugar and butter- yum. I still remember it :) I had my books packed away and now I am reviewing and making a list of them all. One of the recipes I always use is how to make macaroni and cheese !! It is so much easier to make a white sauce in the microwave, you do not have to stand at the stove continuously stirring with a whisk. You can use this idea for any sauce or gravy. You first melt the butter in large bowl, then add flour, salt and pepper, whisk together and microwave for 30-45 seconds, then add milk and microwave one minute at a time , remove and whisk. Takes about 3-4 minutes depending on amount and microwave. The key is just to remove and stir every minute until just starts to boil, then remove and stir in cheese and voila! perfect cheese sauce! This is one book in a series. It includes how to microwave broccoli, which I have done a lot, asparagus, artichokes, carrots, potatoes, green beans spinach, corn on the cob, zucchini, etc. I won't cook meat such as a meatloaf , they do have a recipe for that, but there are many good ideas to incorporate into your recipes and do part in the microwave.
