This is an excellent modern cookbook with delightful historical excerpts. The author approaches traditional ingredients creatively, and all explanations of steps are thorough, exact, and easy to follow. I never knew facts about corn, hominy, grits, wheat, beans, etc. that are presented in this book. It is also written in such a manner that you do not want to put it down even when you are not planning on cooking right away. Just one word of caution: Inexperienced cooks might find quite a number of recipes a bit challenging.
