Thomas Mario does a great job of presenting recipes in a manner meant more to educate the wannabe chef than to instruct. Like most cook books it is best to view this one only as suggestions by someone who knows what they're doing better than you. The basis behind the book is, of course, cooking with spirits. Every dish contains some alcohol, and, while I have been unable to find some of his suggested ingredients. It is possible to find an acceptable substitute in almost any major liquor store. Furthermore, each dish is meant somewhat as a showmanship piece, flamboyant in some way. The book is somewhat advanced (at least for me) but can be attempted by any inspired chef with the least bit of motivation. Mario describes every dish with a goodly amount of specifics but does not get overly precise. Some color photos are included as well as a great intro.
