The "whys" of expert cooking from creative chefs.

There are so many cookbooks that just don't explain the "whys." This is a great glimpse into chefs actively creating new recipes, techniques and how they execute them. It's one of the few cookbooks I would actually want to have on my bookshelf taking up space.
