I have had this book for about three years and have made several of the recipes. It never dissapoints; the recipes are easy enough for me to make after coming home from work. I rarely open my other recipe books-- but this one is tagged, marked, and stained because it sees so much action! My favorite recipes are the Corn and Potato Tacos and the Japanese-Style Fried Tofu.

My wife and I got this cookbook about a year and a half ago. Within six months, we'd pretty much stopped using any of our old cookbooks. The title doesn't lie; it's easy. This is the only cookbook we have with recipes that we actually have the energy and time to cook when we get home from work. And, just as importantly, the food is great. I don't think we've tried a recipe yet that we didn't like. I will concede the previous reviewers post that the fat content in many of the recipes is high. But none of the recipes are set in stone; my wife and I often modify them to include fat free of low fat ingredients, and they still taste great.
